Hinterland Rice with Currants & Fennel Seeds
Whenever they’re coming for dinner and I ask what I should make, someone always says “Can you make that rice again?”
The rice is grown in the Northern Rivers using Biodynamic farming practices, which takes organic farming to a whole new level. The idea is that the whole farm is treated as one connected ecosystem, with everything working together to build healthier soil and grow better produce.
There’s also a whole side to it involving moon cycles and when things should be planted, but I don’t really understand that. All I know is that this rice is unlike any rice I’ve ever tasted.
It’s nutty, a bit sweet, and the fennel seeds intensify the flavours even more. Then the currants soften and caramelise while everything cooks together, adding little bursts of sweetness.
I’ve wanted to sell this rice for the past year, but there hasn’t been enough available. This year they finally grew enough for me to buy some, so I ordered as much as I could.
We’ve packed it up with the fennel seeds and Australian currants so you can make the exact dish I make at home.
